Pointing is done using richer mix than the stone masonry mortar whilst the mortar in the jones is still green. Joints must be raked properly before pointing. If you are pointing on old work moisten the joints few hours before taking up the pointing.

Beach sand is laden with salts, chloride and sulphates are very harmful elements leading to deterioration of reinforcement and concrete. This calls for cleaning the sand incurring huge costs. In Middle East sand is mined and washed several times to get rid of the salt.
Physical properties of the beach sand like fitness modulus and shape criteria may not help produce workable concrete.

Check your project specifications for these limits. Chloride limit of 0.3% and Sulphate limit of 4% were specified for structural concrete on one job I worked.
Chloride limit could be as low as 0.06% for prestressed concrete.
In addition to above measures, durability comes from :
Proper design mix, Consistent production of good quality concrete , concreting techniques, curing and good testing regime are also required in addition to above efforts.
